To provide a method for efficiently removing lees from raw soy sauce without using a lees coagulating agent, and shortening a clarification and filtration period and to provide an apparatus for executing the method.

SOLUTION: This apparatus for clarifying soy sauce comprises a raw soy sauce supply source 1, a soy sauce oil tank 2, a mixer 3 installed with a mixed element and a soy sauce oil separating tank 4. The apparatus includes making the raw soy sauce supply source 1 and the mixer 3 communicate to each other with a pipe 6 equipped with a pump 5 in the middle, making the pipe 6 and the soy sauce oil tank 2 communicate to each other with a pipe 8 equipped with a pump 7 in the middle and making the mixer 3 and the soy sauce oil separating tank 4 communicate to each other with a pipe 9. The clarified raw soy sauce is obtained by using the apparatus, adding soy sauce oil to raw soy sauce followed by mixing in a continuous flow and separating the soy sauce oil from the mixture.
