The present invention relates to an instant beverage powder and, more particularly,to an instant soluble beverage powder which forms foam on its upper surface whenreconstituted with water. The powder has a foaming porosity of at least 35% anopen pore volume of less than 3 ml/g and a closed pore average diameter D50 of lessthan 80 micrometres.
