The present invention relates to a method for stabilizing the interface between at least two phases of a product, the method comprising the steps of (i) providing a composition comprising (a) at least one gas phase, (b) at least one aqueous phase, (c) a stabilizing agent comprising particles of a plant material and (ii) mixing the composition in order to stabilize the interface between the at least one gas phase and at least one aqueous phase of a product. The invention relates also to products, such as food and beverage products, obtainable from the method, and to the use of a related stabilising agent for stabilising the interface between a gas phase and an aqueous phase of a dairy product, an ice cream product, a pet-care product or a beverage product.La présente invention porte sur un procédé pour la stabilisation de l'interface entre au moins deux phases d'un produit, le procédé comprenant les étapes consistant à (i) utiliser une composition comprenant (a) au moins une phase gazeuse, (b) au moins une phase aqueuse et (c) un agent stabilisant comprenant des particules d'une matière végétale et (ii) mélanger la composition afin de stabiliser l'interface entre ladite ou lesdites phases gazeuses et ladite ou lesdites phases aqueuses d'un produit. L'invention concerne aussi des produits tels que les produits alimentaires ou les boissons obtenus par ces procédés et l'utilisation d'un agent stabilisateur correspondant pour stabiliser l'interface entre une phase gazeuse et une phase aqueuse d'un produit laitier, un produit à base de crème glacée, un produit de soins pour animaux domestiques ou un produit de type boisson.
