PROBLEM TO BE SOLVED: To provide a preparation method of sugar-coating liquid capable of preventing volatilization of flavor by shortening a required time of a sugar-coating step, and preparing the stably-emulsified sugar-coating liquid without emulsifying beforehand an oil-soluble perfume; and to provide sugar-coating liquid and a sugar-coated product having nice smell.SOLUTION: An oil-soluble perfume and sorbitan fatty acid ester are added into aqueous solution containing carbohydrate and gum arabic, and then agitated, to thereby obtain sugar-coating liquid, and further a sugar-coated product is obtained by using the same.SELECTED DRAWING: None【課題】糖衣掛け工程の所要時間を短縮することでフレーバーの揮散を防止でき、油溶性香料を予め乳化させることなく、乳化が安定した糖衣液を調製できる、糖衣液の調製方法、及び香り立ちの良い糖衣液、糖衣製品を提供すること。【解決手段】糖質とアラビアガムを含有する水溶液に、油溶性香料とソルビタン脂肪酸エステルを添加して撹拌し、糖衣液を得る。さらにそれを用いて糖衣製品を得る。【選択図】なし
