The present invention, in julienning balloon flower root in the longitudinal direction thereof, prevents a portion of the root from being julienned while enhancing hygiene and convenience to satisfy consumer demand for checking an original form of the balloon flower root with the naked eye. A device for julienning the balloon flower root according to the present invention intermittently inputs a holding plate (50), on which the balloon flower root is put, into a julienning process unit (70) by a conveyor belt, and then makes a julienning blade (60), dropped toward the holding plate input into the julienning process unit, julienne the balloon flower root in the longitudinal direction thereof, wherein the julienning blade (60) is arranged in the longitudinal direction of the balloon flower root and is shorter than the balloon flower root, thereby preventing a portion of the balloon flower root from being julienned after julienning the balloon flower root in the longitudinal direction by the julienning blade (60).본 발명은 도라지 뿌리를 그 길이방향으로 절개함에 있어서, 위생성과 편의성을 향상하면서도, 뿌리 일부가 절개되지 않도록 함으로써 소비자가 도라지 뿌리의 원형을 육안으로 파악하고자 하는 소비자의 욕구를 충족시키기 위한 것으로서,본 발명에 따른 도라지 절개장치는,도라지가 얹힌 거치판(50)을, 컨베이어벨트로써 절개가공부(70) 내부로 간헐적으로 투입한 후, 상기 절개가공부 내에 투입된 거치판을 향해 하강하는 절개칼날(60)이 도라지를 그 길이방향으로 절개하게 되는데, 상기 절개칼날(60)은 도라지의 길이방향으로 배치되되, 상기 절개칼날(60)의 길이를 도라지의 길이보다 짧게 구성함으로써, 절개칼날에 의해 도라지가 길이방향으로 채썰어진 후에도 뿌리의 일부는 절개되지 않도록 한 것을 특징으로 한다.
