PROBLEM TO BE SOLVED: To provide a photographing device capable of acquiring a focused image in the whole area of a plane, even when photographing the plane existing in the narrow space of a gap including the incision surface of carcass from an oblique direction and to provide a photographing method and a meat quality evaluation method for the carcass.SOLUTION: A photographing device 1 for photographing the plane forming the gap from a diagonal upper side includes a lens 32, an imaging element 50 which receives light after passing through the lens 32, and a rotation support part 40 to which the imaging element 50 is fixed and which adjusts the inclination of the imaging element 50 with respect to the lens 32. The photographing device 1 can adjust the inclination of the imaging element 50, so that the image element surface of the imaging element 50 crosses a straight line formed by crossing the plane and the lens main surface of the lens 32.SELECTED DRAWING: Figure 4【課題】枝肉の切開面を含む隙間の狭い空間に存在する平面を斜め方向から撮影したとしても、平面の全域でピントの合った画像を取得することができる撮影装置及び撮影方法、並びに枝肉の肉質評価方法を提供する。【解決手段】隙間を形成している平面を斜め上方から撮影する撮影装置１は、レンズ３２と、レンズ３２を通過した光を受光する撮像素子５０と、撮像素子５０が固定され、レンズ３２に対する撮像素子５０の傾きを調整する回転支持部４０と、を備えている。撮影装置１は、平面とレンズ３２のレンズ主面が交わって形成される直線に撮像素子５０の撮像素子面が交わるように撮像素子５０の傾きを調整することができる。【選択図】図４
