The invention relates to a method for purposes of handlingcheese blocks, and a device for this purpose, which inparticular can be assigned to a so-called cassette presswith round or cornered cheese moulds. A protective, rapidand precise reloading of cheese blocks is to be achieved.For this purpose compressed cheese curd is released fromthe inner wall of a mould (4) and after a turning operationis evacuated from the mould (4), wherein the mould (4) isrotated, lowered and shaken or blown, wherein a liftinggripper (12) is guided as far as the stop on a pick-updevice (13), and in the mould (4) the cheese block (K) issubjected to a shaking movement.The mould (4), that is to say, the cassette (3), is thenraised, rotated and guided back into the cassette press, sothat the cheese block (K) can be fixed in position on thelifting gripper (12) by means of a clamping means.The pick-up plunger (16) with the cheese block is thenlowered, that is to say, retracted, the lifting gripper (12is traversed towards a secondary mould (14) for the cheeseblock, preferably downwards, the clamping means open, andthe cheese block is positioned in a secondary mould (14).
