PURPOSE: A multi layer food manufacturing device and a method thereof are provided to produce multi layer food including dumplings by wrapping an internal food material including filling using a hard external food material. CONSTITUTION: An internal food material feed unit (20) includes an internal food material transferring device (22) which is capable of transferring internal food materials by force. An external food material feed unit (30) includes an external food material transferring device (32) which is capable of transferring external food materials by force. A discharging unit (40) discharges the internal or external food materials. The internal food material transferring device and the external food material transferring device include a one-axis eccentric screw pump (200) with a rotor and a stator. A controller controls the transfer of the internal or external food materials. The internal food material feed unit includes an internal food material storage tank (24) and a stirrer (26). The external food material feed unit includes an external food material storage tank (34). The external food material transferring device includes a pump unit (35) with the one-axis eccentric screw pump, a driving unit (36), and a connection unit (38).본 발명의 과제는, 외층 식재 및 내층 식재로서 점성을 갖는 식재를 사용하면서, 품질이 높은 다층 식재를 제조 가능하고, 또한 장치 구성이 심플한 다층 식품 제조 장치의 제공을 목적으로 하였다.다층 식품 제조 장치(10)는, 일축 편심 나사 펌프에 의해 구성된 내층 식재 압송 장치(22)와, 외층 식재 압송 장치(32)와, 토출부(40)를 갖는다. 토출부(40)에 설치된 토출 노즐(42)은, 외층 식재 공급 장치(32)에 접속된 외층 식재 토출통(58)의 내측에, 내층 식재 공급 장치(22)에 접속된 내층 식재 토출통(56)을 삽입한 이중 구조의 것이다.
