PROBLEM TO BE SOLVED: To produce a low protein rice by a treatment with lactic acid fermentation which enhances the rate of removing protein.SOLUTION: After disinfection washing of a raw material rice is carried out, the disinfected washed rice is soaked in a brewing solution containing lactobacillus and protease. A fermentation treatment is performed under aerobic conditions where a sufficient amount of dissolved oxygen is present in the brewing solution.
