PROBLEM TO BE SOLVED: To provide bread crumbs for microwave oven cooking, allowing a microwave oven-cooked food having a texture similar to that of an oil fried food to be obtained a bread crumb mixture for microwave oven-cooking, which contains the bread crumbs and a method for manufacturing a cutlet-like food by microwave oven cooking with use of the bread crumb mixture.SOLUTION: The bread crumbs for microwave oven-cooking comprises a fermented composition of soybean protein and gluten. The bread crumb mixture for microwave oven-cooking comprises the bread crumbs and egg white powder. The method for manufacturing a cutlet-like food comprises microwave oven-cooking with use of the bread crumb mixture.
