PROBLEM TO BE SOLVED: To provide a production method of natural product extraction beverage for extracting coffee or the like by using electrolytic reduction water in which an oxidation reduction potential of an extract is minus.SOLUTION: Provided is the production method of natural product extraction beverage for extracting coffee or tea by using hot water of electrolytic reduction water including a dissolution hydrogen molecule concentration. Means using electrolytic reduction water obtained by performing electrolysis of heated raw material water, means for extracting extract under high pressure in a closed vessel, and means for adding at least one dissolution hydrogen molecule stabilizer selected from polysaccharide and polyphenol to the electrolytic reduction water are provided, and among the three means, at least one means is used for extracting coffee or tee by suppressing vaporization of the dissolution hydrogen molecule, and the oxidation reduction potential of the extract is made equal to or less than 0 mV.COPYRIGHT: (C)2014,JPO&INPIT【課題】 電解還元水を用いたコーヒー等の抽出による天然物抽出飲料の製造方法において、抽出液の酸化還元電位がマイナスとなる天然物抽出飲料の製造方法を提供する。【解決手段】 溶存水素分子濃度を含む電解還元水の熱水を用いてコーヒーまたは茶類を抽出して天然物抽出飲料を製造する方法において、加熱した原料水を電気分解して得られる電解還元水を用いる手段、密閉容器内で高圧下に抽出する手段および前記電解還元水に多糖類およびポリフェノールから選ばれる少なくとも1種の溶存水素分子安定化剤を添加する手段から選ばれる少なくとも1種の手段で溶存水素分子の揮発を抑制してコーヒーまたは茶類を抽出して、抽出液の酸化還元電位を0mV以下とすることを特徴とする飲料の製造方法。【選択図】 図1
