PROBLEM TO BE SOLVED: To provide rice flour for bread, exhibiting an excellent dough property having less stickiness, when used in the production of bread, and capable of obtaining rice flour bread having crispy texture, also preventing caving and having an excellent appearance.SOLUTION: As the rice flour for bread, the rice flour obtained by using nonglutinous rice as raw material rice, wet heat-treated within 70 to 130°C range temperature for 5 to 60 min under normal pressure, is used.
