PROBLEM TO BE SOLVED: To provide an antioxidant composition having an excellent antioxidant action, a composition inhibiting activity of disaccharide hydrolase, having an excellent action of inhibiting activity of disaccharide hydrolase, a composition for intestinal regulation having an excellent action for intestinal regulation, a diet composition having an excellent diet action, each making use of bean curd lees not effectively used, food and drink, and a method of selectively producing arabinose.SOLUTION: An antioxidant composition includes enzyme-treated bean curd lees prepared by treating bean curd lees with a cell-wall decomposing enzyme. A composition inhibiting activity of disaccharide hydrolase, a composition for intestinal regulation and a diet composition each include fermented enzyme-treated bean curd lees prepared by fermenting the enzyme-treated bean curd lees with yeast, prepared by treating bean curd lees with a cell-wall decomposing enzyme. Food and drink include at least any of the antioxidant composition, the composition inhibiting activity of disaccharide hydrolase, the composition for intestinal regulation and the diet composition.
