To provide a method for producing a chitin decomposition product, capable of controlling the degree of low-molecular weight and degree of acetylation of the same easily, reducing the using amounts of solution of an acid and alkali, and of organic solvent and also superior in the utilization efficiency of a chitin-containing composition or chitin used as a raw material.

SOLUTION: This method for producing the chitin decomposition product is provided and by finely pulverizing a chitin raw material consisting of the chitin-containing composition or chitin as a chitin substance so as to become &le 70% degree of crystallinity of the chitin substance and directly hydrolyzing. Alternatively, the method is provided by finely pulverizing the chitin raw material, consisting of the chitin-containing composition so that it becomes 70% or lower for the crystallization degree of the chitin substance and extracting the chitin from the same and then hydrolyzing the chitin after this extraction.
