The present invention relates to Issatchenkia orientalis KCTC 12141BP (Korean Collection for Type Culture, accession date: February 21, 2012) having excellent acid resistance, sugar resistance, and alcohol resistance, and a fermented food using the same. As proved by examples of the present specification, Issatchenkia orientalis MS-1 having excellent flavor at the time of fermentation as well as excellent acid resistance, sugar resistance, and alcohol resistance according to the present invention is useful for the fermentation in a medium containing high-concentration organic acid since, unlike general yeasts, it exhibits growth of 88% or higher under acidic conditions of pH 2 as compared with pH 5.3 which is the optimum growth pH value, can grow under conditions of 0.4% oxalic acid and 0.4% acetic acid, and does not show growth inhibition even with the treatment with 1% or higher citric acid and maleic acid. Further, Issatchenkia orientalis MS-1 of the present invention can grow even under high-concentration sugar conditions of 40% or higher and thus achieve fermentation under hyperosmotic conditions such as honey, and can grow even under the treatment with 10% alcohol, unlike various Saccharomyces cerevisiae strains commercially used at the time of fermentation, and thus is useful for the fermentation under conditions requiring resistance against high-content alcohol. Further, Issatchenkia orientalis MS-1 of the present invention has excellent flavor at the time of fermentation and thus can be used for the production of enhanced functional fermented beverages and traditional foods.
