The water soluble plant extract contains rosmarinic acid and has a certain total phenol content such that the ratio of total phenol content to rosmarinic acid is about 1.1: 1 to about 3.5: 1. Also provided is a method of reducing off-flavors and aromas in a nutritional composition having an oxidizable component.
