A process of preparing drum-dried makapuno from Embryo-cultured makapuno (ECM), with nine (9) to ten (10) months maturity which process comprises: 1) sorting out based on size and maturity of the makapuno 2) weighing prior to processing the makapuno 3) cleaning the makapuno shell which includes removing the fibrous husk 4) washing 5) cutting of nuts into halves 6) removing liquid fraction and scooping the solid fraction of the makapuno 7) pureeing the solid fraction by using a cleaned and sanitized colloid mill 8) weighing the puree 9) pasteurizing at 80oC for 20 minutes 1 0) adding food ingredients that is, 10 pcnt maltodextrin and 10 pcnt cornstarch, and 25 pcnt sugar 11) drum drying with the following parameters: temperature of 130 + 5oC, pressure of 3 bars, revolution of 2 rpm, feed rate of 0.5 kg/min, and drum clearance of 0.813mm 12) folding and cutting the makapuno fruit into the desired size and shape once it is scraped out of the blade 13) cooling down the makapuno fruit flakes prior to packaging and 14) packaging using a laminated PE-Aium or OPP (90 microns).
