PROBLEM TO BE SOLVED: To provide a quality improver for wheat flour-containing food enabling production of wheat flour-containing food having favorably meltable palate feeling in spite of its creamy palate feeling or moist soft palate feeling, in specific, having favorable palate feeling and meltability bearing comparison with the one just after cooked, even after long preservation or just after frozen and thawed, while the stickiness peculiar to chemically-modified starch does not exert an influence on the palate feeling just after prepared even when using the chemically-modified starch in addition to the wheat flour as raw material.

SOLUTION: The quality improver for wheat flour-containing food contains dextrin having the following properties (a): (a) a blue value measured under the following condition (1)-(3) is in a range of 0.4-1.2: (1) an aqueous solution containing 1 w/v% of dextrin is prepared with 80°C distilled water and is cooled to 25°C (2) 10 ml of the 1 w/v% aqueous solution of the dextrin (25°C) is mixed with 10 ml of an aqueous solution containing 20 mg of iodine and 200 mg of potassium iodide to adjust the mixture with the distilled water so as to become 100 ml and (3) the prepared solution is shaken at 25°C for 30 minutes in a shielded condition, and thereafter the absorption of light of reaction liquid in 680 nm is measured with a spectrophotometer under the condition of 25°C to regard the measured value as the blue value.
