The invention relates to a lactose-positive, galactose-negative, Streptococcus thermophilus strain carrying a mutation in 2 or 3 genes selected from the group consisting of 1) a gene encoding a protein of the mannose-glucose-specific PTS and a glcK gene, 2) a gene encoding a protein of the mannose-glucose-specific PTS and a ccpA gene, and 3) a gene encoding a protein of the mannose-glucose-specific PTS, a glcK gene and a ccpA gene, wherein said strain, when used to ferment milk, provides a low lactose fermented milk and/or a fermented milk not undergoing acidification when stored at fermentation temperature.L'invention concerne une souche de Streptococcus thermophilus positive au lactose, négative au galactose portant une mutation dans 2 ou 3 gènes choisis dans le groupe constitué par 1) un gène codant pour une protéine du PTS spécifique du mannose-glucose et un gène glcK , 2) un gène codant pour une protéine du PTS spécifique du mannose-glucose et un gène ccpA , et 3) un gène codant pour une protéine du PTS spécifique du mannose-glucose, un gène glcK et un gène ccpA, ladite souche, lorsqu'elle est utilisée pour fermenter le lait, fournit un lait fermenté à faible teneur en lactose et/ou un lait fermenté ne subissant pas d'acidification lorsqu'il est stocké à une température de fermentation.
