PROBLEM TO BE SOLVED: To provide a method for facilitating propagation of edible microorganisms by ultrasonic irradiation.SOLUTION: The method for facilitating propagation of edible microorganism fungus body and facilitating generation of metabolic products by ultrasonic irradiation is characterized by: affecting a boundary layer between the fungus body and a medium surrounding the fungus body with ultrasonic waves by irradiating the edible microorganisms with ultrasonic waves in a fermentation process using the edible microorganism fungus body and the fermentation medium to miniaturize the boundary layer; thereby facilitating propagation of the fungus body and increasing generation of the metabolic products. Energy-saving, low-cost, and highly versatile new fermentation technologies with low environmental burdens, appropriately usable in a small-sized facility, can be provided in industrial fields such as brewing and lactic acid fermentation.
