PROBLEM TO BE SOLVED: To provide a method for facilitating propagation of edible microorganisms by ultrasonic irradiation.SOLUTION: The method for facilitating propagation of edible microorganism fungus body and facilitating generation of metabolic products by ultrasonic irradiation is characterized by: affecting a boundary layer between the fungus body and a medium surrounding the fungus body with ultrasonic waves by irradiating the edible microorganisms with ultrasonic waves in a fermentation process using the edible microorganism fungus body and the fermentation medium to miniaturize the boundary layer； thereby facilitating propagation of the fungus body and increasing generation of the metabolic products. Energy-saving, low-cost, and highly versatile new fermentation technologies with low environmental burdens, appropriately usable in a small-sized facility, can be provided in industrial fields such as brewing and lactic acid fermentation.
