The utility model relates to a method of producing PILI CREAM CHEESE by utilizing Pili kernels and combining it with different spices to give it a more distinct flavor. The process comprising of the following steps a) preparing the pili kernels by boiling it to remove the exocarp or the skin b) subjecting the kernels to a food processor to puree it c) mixing the pureed kernels to spices, salt and kalamansi juice, d) transferring the mixture in a double boiler, e) simmering it in a very low fire until it reached the desired consistency f) cooling the mixture g) transferring the cheese to bottles) storing the cheese for a month for aging purposes.
