PROBLEM TO BE SOLVED: To obtain a new protein having an &alpha-amylase inhibitory activity and to provide a method for producing the same.
SOLUTION: The protein having an &alpha-amylase inhibitory activity exhibits properties that (1) it has a molecular weight of 12.0kDA by SDS polyacrylamide electrophoresis and 23.3kDA by gel filtration chromatography, (2) a subunit has an N-terminal amino acid sequence of SGPWMCYPGQAFQVPALPNM (S is serine G is glycine P is proton W is tryptophan M is methionine C is cystine Y is tyrosine Q is glutamine A is alanine F is phenylalanine V is valine L is leucine N is asparagine) and (3) 1 mol of a subunit dimer is reacted with 2 mols of &alpha-amylase to antagonistically inhibit activity of swine panereas-, human saliva- and human pancreas-derived &alpha-amylase.
