This invention relates to a process for enriching Paneer and Dahi naturally with antioxidant like catechin and resorcinol comprising, incorporating tannins containing herbal feed ingredient in diet of lactating cows of early calved making in 100 to 150 days feeding trial, taking out desired quantity of value added cow milk after 100-120 days feeding, preparing antioxidants rich Paneer and Dahi, Identification and quantification of tannin monomers from herbal feed ingredient such as catechin in paneer and catechin and resorcinol in Dahi respectively.
