PROBLEM TO BE SOLVED: To provide a branched-chain amino acid-containing comprehensive nutritional food in a baked confectionery form made by baking a mixture of three kinds of branched-chain amino acids including isoleucine, leucine, and valine as active ingredients, at least one kind of protein raw material selected from sodium caseinate and concentrated soybean protein, and dietary fiber, being free from hardening after baking which causes difficulty in ingestion for elderly and cracking in transportation.SOLUTION: The branched-chain amino acid-containing comprehensive nutritional food in a baked confectionery form comprises a mixture of branched-chain amino acids including isoleucine, leucine, and valine in an amount of 3.0 to 5.0 g per 100 kcal, 9 to 16 mass% of soybean material made from raw material of full fat soybean or defatted soybean, 1.5 to 3.0 mass% of gluten, and 5 to 10 mass% of at least one from any of honey, liquid sugar, starch syrup, and reduced starch syrup.
