PROBLEM TO BE SOLVED: To provide an apparatus and a method for heat treatment of granular foodstuffs using superheated steam, in which uniformity of heat treatment of granular foodstuffs can be increased and quality of the heat treatment of the granular foodstuffs can be increased, and also the heat treatment can be efficiently accomplished.SOLUTION: An apparatus 10 for heat treatment of granular foodstuffs is configured such that a screw conveyor 12 is rotatably supported in a casing 11, and superheated steam is supplied into the casing 11 and the granular foodstuffs 16 inputted in the casing 11 are heat-treated with the superheated steam. The screw conveyor 12 comprises a screw shaft 14 and a screw blade 15 helically formed in an outer circumferential surface of the screw shaft 14. Auxiliary agitation blades 20 for scooping the granular foodstuffs 16 and assisting the stirring of the granular foodstuffs 16 are installed so as to be extended in the axial direction of the screw shaft 14, between mutually facing screw blade portions.COPYRIGHT: (C)2015,JPO&INPIT【課題】粒状食品の加熱処理の均一性を高めることができ、粒状食品の加熱処理の品質を向上させることができるとともに、加熱処理を効率良く遂行することができる過熱水蒸気を用いた粒状食品用加熱処理装置及び粒状食品用加熱処理方法を提供する。【解決手段】粒状食品用加熱処理装置10は、ケーシング11内にスクリューコンベヤ12が回転可能に支持されるとともに、ケーシング11内に過熱水蒸気が供給され、ケーシング11内に投入された粒状食品16を過熱水蒸気で加熱処理するものである。前記スクリューコンベヤ12は、スクリュー軸14とその外周面に螺旋状に形成されたスクリュー羽根15とにより構成されている。スクリュー羽根15間には粒状食品16を掬い上げて粒状食品16の撹拌を補助する補助撹拌羽根20がスクリュー軸14の軸線方向に延びるように架設されている。【選択図】図1
