PROBLEM TO BE SOLVED: To provide an instant sobagome which can be simply and easily cooked to an edible state in a timely manner, with reduced energy costs for heating and freeze-drying and a high-efficient processing method to achieve a reduced cooking time and a high yield with reduced amount of waste in processing.SOLUTION: Buckwheat seeds in a state with addition of water are heated, so that the starch of buckwheat seeds is pregelatinized. The buckwheat seed in a granular shape retained by the pregelatinized starch is applied with a pressure to fracture the surface, so that the whole surface is provided with innumerable fracture marks. Further, the pressed surface subjected to pressure is formed into a non-planar state. The whole surface including the pressed surface in a non-planar state is provided with fracture marks, so that the whole surface of the buckwheat seed is formed into a randomly uneven surface. The instant sobagome is thus manufactured.
