PROBLEM TO BE SOLVED: To provide a protein composition having a high β-sheet structure and a high gelation rate.SOLUTION: According to the present invention, there is provided a protein composition comprising a GAGAGS sequence (1) and an amino acid sequence (X) described below and/or an amino acid sequence (X') described below. The ratio of the total number of the amino acid sequence (X) and the amino acid sequence (X') in the total number of amino acids of the protein (A) is 40 to 80%. The ratio of the total number of the GAGAGS sequence (1) in the total number of amino acids of the protein (A) is 5 to 45%. The β-sheet structure rate of the protein (A) by a circular dichroism spectrum method is 60 to 80%. The complex elastic modulus of the protein composition by a rheometer is 4×102 to 1×104 Pa. Amino acid sequence (X): at least one amino acid sequence selected from the group consisting of VPGVG sequence (7), GVGVP sequence (8), and GAHGPAGPK sequence (9).
