The invention relates to a method for producing highly pure aqueous pungent compositions (according to Scoville) (HASC), and products that can be produced therefrom. This refers to compositions consisting of organic or vegetable starting materials, from which pungent agents (according to Scoville) are extracted by means of high-pressure processes and are brought into an oil-in-water compound (aqueous) by means of an emulsifier. Subsequently, these are dried, for example by spray drying. In order to achieve the highest possible degree of purity, a fractional deposition is carried out in a further step using a column for supercritical fluid extraction (SFE).
