The present invention relates to a composition for preventing browning of fruits and vegetables and a method for preventing browning of fruits and vegetables using the same. The composition for preventing browning according to the present invention includes oxidized starch as an active ingredient, thereby maximally preventing a browning phenomenon such as fruits and vegetable capable of easily browning through cutting or processing, and improving marketability by extending expiration date. Also, the present invention provides fresh fruits and vegetables preferring to consumers. The composition for preventing browning of fruits and vegetables comprises the oxidized starch of 1 to 15 wt% as the active ingredient.본 발명은 과일, 채소류의 갈변 방지용 조성물 및 이를 이용하여 과일, 채소류의 갈변을 방지하는 방법에 관한 것이다.본 발명에 따른 갈변 방지용 조성물은 산화전분을 유효성분으로 포함함으로써 절단 또는 가공을 통하여 쉽게 갈변되기 쉬운 과일, 채소류 등의 갈변 현상을 최대한 방지하여, 유통기간을 연장시켜 상품성을 향상시키고, 소비자들이 선호하는 신선한 과일, 채소류를 제공할 수 있게 한다.
