PROBLEM TO BE SOLVED: To provide a method of effectively eluting oil-soluble active ingredients included in fruit peel or leaves of citrus without degradation into edible oil, and to provide an eluted oily composition or a powdered fat composition thereof, to provide methods and apparatuses for producing them, and to provide foods using these compositions.SOLUTION: There is provided an eluting method of oil-soluble active ingredients comprising: mixing fruit peel or leaves of citrus with an edible oil performing a heat treatment with superheated steam in the absence of oxygen and eluting the oil-soluble active ingredients into the edible oil. A method of producing oily compositions which produces the oily compositions by separating a liquid part after heat treatment. Further, there is provided a production apparatus of the oily compositions which produces the oily compositions containing the active ingredients in fruit peel or leaves of citrus, consisting of: a saturated steam generating means, a superheated steam generating means a temperature control means of the superheated steam an elution treatment container for mixing and supplying fruit peel or leaves of citrus with the edible oil to elute the active ingredients thereof into the edible oil and a means of separating a liquid part from an elution treatment product after the treatment.【課題】柑橘類の果皮または葉に含まれる油溶性の有効成分を食用油に劣化させずに効果的に溶出させる方法及びその溶出した油性組成物あるいは粉末油脂組成物及びそれらの製造方法及びそれらの製造装置及びそれらの組成物を用いた食品の提供。【解決手段】柑橘類の果皮または葉と食用油を混合し、過熱水蒸気により無酸素状態で加熱処理し、食用油中に油溶性有効成分を溶出させる油溶性有効成分の溶出方法。さらに、加熱処理後に液体部分を分離して油性組成物を製造する油性組成物の製造方法。また、飽和水蒸気発生手段と、過熱水蒸気発生手段と、該過熱水蒸気の温度制御手段と、柑橘類の果皮または葉と食用油とを混合投入し、その有効成分を食用油中に溶出させる為の溶出処理容器と、処理後の溶出処理物から液状部を分離する分離手段とからなり、柑橘類の果皮または葉中の有効成分を含有する油性組成物を製造する油性組成物の製造装置。【選択図】図6
