In accordance with the invention, a method for producing packaged dairy product from reduced lactose comprises the following steps: a) preparing a dairy feed from reduced lactose; b) processing the milk derivative from this milk feed at a high temperature, the milk derivative being heated to a temperature in the range 140-180 ° C, kept at this temperature for a maximum of 200 ms and then cooled; c) packaging of dairy product from reconstituted lactose obtained from a milk derivative after processing at a high temperature.
