The purpose of the present invention is to provide a method by which high-quality rice flour equivalent to that obtained using an enzyme can be produced merely by mechanical pulverization, said high-quality rice flour being composed of fine particles with rounded shapes, having properties similar to those of wheat flour, and being suitable for the production of breads, cakes, noodles and so on. This method is characterized by subjecting a raw material rice which has been immersed in water and thus adjusted to a suitable water content to size reduction with a cracking/sizing machine, fine grinding with a jet mill, and then drying with a pneumatic conveying dryer.Cette invention concerne un procédé permettant de produire une farine de riz d'une qualité équivalente à celle obtenue avec une enzyme, ladite farine étant obtenue simplement par pulvérisation mécanique. La farine de riz de grande qualité est constituée de fines particules aux formes arrondies, elle présente des propriétés similaires à celles de la farine de blé et convient pour la fabrication du pain, des gâteaux, des pâtes et autres.
