PROBLEM TO BE SOLVED: To provide an apparatus and method for extracting a soup stock, capable of producing the soup stock economically, sanitarily, and safely.SOLUTION: This invention according to one embodiment provides an apparatus 1 for extracting a soup stock, comprising: a stock take-out part which is connected to the bottom of a tank 2 for retaining water and a material used for extracting the soup stock, and through which soup-containing stock extracted from the material and dissolved in water is taken out； and a residue discharge part through which the residue of the material is discharged.
