PROBLEM TO BE SOLVED: To provide hypotensive agents, foods, aged pork, and processed or cooked products of aged pork, containing peptide having health functions generated during aging of pork and salt thereof; to provide foods, aged pork, and processed or cooked products of aged pork, which are also excellent in palatability; and to provide methods of evaluating aging of pork, having palatability as well as health functions such as hypotensive effects.SOLUTION: The present invention provides a hypotensive agent, food, aged pork, and processed or cooked product of aged pork, containing any one or more selected from peptides or salts thereof represented by the following structural formulas (1) to (3), as well as a method of evaluating aging of pork comprising a step of measuring any of the peptide amount represented by the following structural formulas (1) to (3).
