The present invention provides a method of producing a collagen peptide-containing composition, the method including performing a masking treatment including reacting, in a liquid having a pH of from 5 to 12 at a temperature of from 70°C to 100°C for 0.01 hour to 2 hours, a collagen peptide having an average molecular weight of 1,200 or less with a saccharide in an amount of from 0.0001 to 0.05 parts by mass of with respect to 1 part by mass of the collagen, the saccharide being capable of undergoing Maillard reaction with an amino group in the collagen peptide.본 발명은 평균 분자량 1200 이하의 콜라겐 펩티드와, 그 콜라겐 펩티드 1 질량부에 대하여, 그 콜라겐 펩티드 중의 아미노기와 메일라드 반응을 일으킬 수 있는 당류 0.0001~0.05 질량부를, pH 5~12 의 액체 중에서, 70 ℃~100 ℃, 0.01 시간~2 시간의 조건에서 반응시키는 마스킹 처리를 실시하는 것을 포함하는 콜라겐 펩티드 함유 조성물의 제조 방법을 제공한다.
