PROBLEM TO BE SOLVED: To provide a method for producing a culture with high polyphenol content by utilizing cereals selected from the group consisting of quinoa seeds and pigmented rice with basidiomycetes and/or ascomycetes, and to provide a polyphenol-containing culture.SOLUTION: The method cultures basidiomycetes and/or ascomycetes with a culture medium comprising cereals selected from the group consisting of quinoa seeds and pigmented rice, and water in an amount of 1.2-100 mass fold of the cereals, allows the mycelium of the basidiomycetes and/or ascomycetes to utilize the cereals, and allows the culture medium to produce polyphenol.
