The present invention provides a colored compound and its molecular structural formula as well as a method for isolating the colored compound resulting from the reaction of Genipa americana genipin with glycine. The new compound was obtained from multiple fractions by chromatography of the material obtained from the reaction. The molecular structure formula was attributed to 1H nuclear magnetic resonance spectroscopy, J-modulation, HH correlation spectroscopy experiments, and other molecular structure analysis tools.
