PROBLEM TO BE SOLVED: To provide a method and an apparatus for producing high-quality bean curd refuse, and to provide a high-quality bean curd refuse product.SOLUTION: This method for producing the high-quality bean curd refuse comprises heating bean curd refuse added with at least 20 mass% of water by continuously jetting hot water heated to &ge100°C and/or steam to a heated chamber of semi-sealed space heated to &ge100°C, substituting air in the heated chamber with produced minute water drops and steam and using a heat medium composition which has a formation of &ge95% humidity and 1% or below oxygen concentration and is kept at 90-180°C.
