The transport and conveyance system 4 is formed by a series of rods/bars 7 spaced from each other and arranged transverse to the advancement of the pastry 5 in the tank 3； the transmission system for the rods/bars 7 and the pastry 5 is outside the cooking tank. The cooking tank 3 has a bottom 3A with section that allows the passage of vapor, thus creating a vapor-water heat exchange by means of the tank itself； the vapor passing into the bottom 3A transfers heat to the sheet.L'invention concerne un appareil (1) pour cuire une pâte feuilletée (5), du type comprenant une structure externe 2, ayant des montants verticaux et des parois d'isolation, pour soutenir et maintenir les moyens constituant la machine； des moyens de cuisson tels qu'au moins un réservoir en acier 3, à l'intérieur de ladite structure 2, conçu pour contenir l'eau de cuisson, au moins un système de transport 4 pour collecter et transporter la pâte feuilletée 5 à immerger dans le réservoir 3. Le système de transport 4 est formé par une série de tiges/barres espacées l'une de l'autre et placées de façon transversale à l'avancée de la pâte 5 dans le réservoir 3； le système de transmission pour les tiges/barres 7 et la pâte 5 se trouve à l'extérieur du réservoir de cuisson. Le réservoir de cuisson 3 comprend un fond 3A ayant une section qui permet le passage de vapeur, en créant ainsi un échange de chaleur vapeur-eau au moyen du réservoir lui-même； la vapeur passant dans le fond 3A transfert la chaleur vers la feuille.
