PROBLEM TO BE SOLVED: To provide an automatic production method capable of reducing processing time of a non-fried elongated food and enhancing processing efficiency.SOLUTION: There is provided an automatic production method of a non-fried elongated food including a step for stirring mixing wheat flour, corn starch, rice flour, oil and fat and a liquid material by a stirring device to form a fine powder-like mixture, a step for gelatinizing and extruding the mixture by a gelatinization extrusion device, a step for conducting kneading by a kneading device, a step for conducting rolling by a rolling device, a step for aging by an aging device, a step for forming a plurality of food lumps with elongated shape and same thickness and a step for cocking the food lumps by a molding device, conducting first drying and second drying, forming a shape of the food lumps and improving an internal structure.SELECTED DRAWING: Figure 1
