The invention relates to a food product of bologna sausage type made of pork meat without residual nitrite. According to the invention, the product consists of 100 parts of pork meat for processing with maximum 30% fat, 1...2 parts of sea buckthorn groats resulted after the sea buckthorn extraction with super-critical CO, 20 parts of technological water, 10 parts of ice flakes, 2 parts of NaCl, 0.2 parts of minced piper, 0.3 parts of garlic, 0.15 parts of minced coriander, 0.5 parts of polyphosphate, the parts being expressed by weight, the product having a humidity of maximum 63.01%, a content of maximum 22.83% fat, 11.89% proteins and 2.13% NaCl, respectively, without residual nitrite detection.
