PURPOSE: A red ginseng extract and a producing method thereof are provided to minimize the concentration of methanol naturally generated from a drying process of red ginseng. CONSTITUTION: A producing method of a red ginseng extract comprises the following steps: dipping ginseng into alcohol, and extra-high voltage processing the ginseng； steaming the processed ginseng； firstly drying the steamed ginseng for 24-48 hours in the vacuum condition； secondly drying the steamed ginseng for 12-24 hours in the vacuum condition； and extracting the obtained red ginseng with a solvent selected from water, alcohol, or their mixture. The residual methanol concentration of the red ginseng extract is less than 100mg/kg.본 발명은 잔류 메탄올 농도가 낮은 홍삼 엑기스 제조방법 및 상기 제조방법에 의해 제조된 홍삼에 관한 것으로 보다 상세하게는 주정에 침지한 인삼을 초고압 처리를 하고 홍삼을 제조하거나, 주정에 침지한 인삼으로 홍삼을 제조하되 홍삼 제조 과정 중 건조 단계를 진공에서 실시하는 것을 포함하는 잔류 메탄올 농도가 낮은 홍삼 엑기스 제조 방법 및 상기 제조방법에 의해 제조된 홍삼에 관한 것이다. 본 발명은 잔류 메탄올의 농도가 기존의 방법에 의해 제조된 홍삼 엑기스에 비해 현저히 낮은 홍삼 엑기스를 제조하는 방법 및 상기 제조방법에 의해 제조된 홍삼 엑기스를 제공한다. 본 발명의 제조방법에 의하면 잔류 메탄올의 농도가 현저히 낮은 홍삼 엑기스를 제조할 수 있으며, 본 발명의 홍삼 엑기스는 잔류 메탄올의 농도가 현저히 낮아 장기 복용시 안전성이 월등히 향상되었으므로, 홍삼 엑기스 첨가 식품 또는 의약품 제조에 효과적이다.
