The present invention relates to a fish-derived collagen peptide, a manufacturing method therefor and use thereof, more particularly, to a fish-derived collagen peptide, a manufacturing method therefor and use thereof by performing two enzyme breakdown processes of raw materials containing fish scales or skin sequentially using a bacterial protease and a fungal protease whose action regions differ from each other. The enzyme breakdown process is performed by adding green tea leaves, extracts thereof, or extract by-products thereof along with the protease, and a refining process is performed by passing through columns of an adsorption resin and an ion exchange resin, thereby obtaining peptide having low molecular weight.
