Procedure for treating plant tissues by pulsing electric field to extract a plant substance, in particular a juice, characterized in that: - the plant tissues are compacted in order to reduce the residual space between the plants without exerting excessive pressure that tends to perform an extraction of the juice, and - the compacted vegetables are subjected to a pulsating electric field in at least one treatment chamber (4), and because after the treatment of the plant tissues by pulsating electric field, a first juice is extracted from the treatment chamber (4).Procedimiento de tratamiento de tejidos vegetales por campo eléctrico pulsante para extraer una sustancia vegetal, en particular, un jugo, caracterizado porque: - se compactan los tejidos vegetales con el fin de reducir el espacio residual entre los vegetales sin ejercer una presión excesiva que tiende a realizar una extracción del jugo, y - se someten los vegetales compactados a un campo eléctrico pulsante en al menos una cámara de tratamiento (4), y porque posteriormente al tratamiento de los tejidos vegetales por campo eléctrico pulsante, se extrae un primer jugo de la cámara de tratamiento (4).
