A method for processing chicken oil is disclosed. The method comprises: providing a crude oil, and separating a liquid oil from the crude oil at a predetermined temperature which is between 13℃ and 17℃ with the tolerance for the temperature measurement is plus and minus 2℃. Accordingly, compared to the crude oil, the obtained liquid oil has a better fatty acid ratio (SFA: MUFA: PUPA).一種雞油處理方法,係包含:提供一初始油脂;及於一預定溫度下,使該初始油脂固液分離,並取得其中的液態油脂;其中,該預定溫度係介於13~17℃之間,且溫差範圍不大於±2℃;藉由前述之雞油處理方法,可以獲得相較於該初始油脂,具有較佳脂肪酸比例(SFA:MUFA:PUPA)之液態油脂。
