PROBLEM TO BE SOLVED: To provide high-calory packaged boiled rice having the same texture as that of ordinary boiled rice.SOLUTION: High-calory packaged boiled rice is obtained by: subjecting raw material rice to rice-washing processing followed by storing in a sealed container performing softening processing by soaking the product in a preparation solution which contains two or more enzymes having different decomposing objects, selected from proteolytic enzyme, cellulose decomposing enzyme, starch decomposing enzyme and lipid decomposing enzyme subjecting softened rice obtained by performing enzyme reaction stop processing after the softening processing to surface hardening processing of gelatinizing the surface by steam heat processing followed by radiation-cooling and packaging the surface hardened rice to bring to the cooked rice by cooking water to bring a moisture content to 44-56% after cooking.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2017,JPO&INPIT【課題】通常米飯と同様の食感を備えた高カロリー包装米飯を提供する。【解決手段】原料米を洗米処理した後、密閉容器に収納してタンパク分解酵素、セルロース分解酵素、デンプン分解酵素、脂質分解酵素の内、少なくとも分解対象が異なる二種以上の酵素を含む仕込液に浸漬して軟化処理を行い、前記軟化処理後に酵素反応停止処理を行って得た軟化米を、蒸熱処理して表面を糊化した後放冷する表面硬化処理を施し、前記表面硬化米を炊飯後水分含量が44~56%となる炊き水で、包装米飯化する。【選択図】図1
