PROBLEM TO BE SOLVED: To provide a food of new palate feeling with soft touch to the mouth utilizing grated frozen vegetables, and to provide a method for producing the food.
SOLUTION: The food, with grated frozen vegetables imparted with freeze resistance as the main raw material is obtained by mixing together at least one protein selected from the group consisting of zooprotein and phytoprotein, starch, a saccharide, a gelatinizer, a flavor and a flavor auxiliary. In the above, the grated frozen vegetables is obtained by the following process: Vegetables are soaked in a solution prepared by mixing together a saccharide, calcium lactate, common salt and a dextrin, and subjected to high-voltage electric field brine freezing, and the resultant frozen vegetables are grated.
