The present invention relates to a health-promotional food composition which an anti-inflammatory effect containing an extract or a fraction of amaranth (Mastixia arborea C.B.Clarke) as an active ingredient. In particular, the extract or the fraction of amaranth exhibit an NO eliminating activity and an effect of inhibiting iNOS generation depending on the density, and thus has an excellent anti-inflammatory effect.
