An instant coffee composition comprising instant coffee particles having internal pores, at least some of these pores containing compressed gas, and finely ground insoluble coffee-based material is applied to the outer surface of the instant coffee particles. The instant coffee composition according to claim 1, wherein the finely ground insoluble coffee-based material is obtained from roasted and ground coffee beans that have already been subjected to an additional extraction operation. The instant coffee composition according to claim 1 or 2, wherein the finely ground insoluble coffee based material has a particle size of from 0.1 μm to 100 μm and preferably from 5 μm to 50 μm. An instant coffee composition according to claim 1 or 2, wherein the finely ground insoluble coffee based material is at least partially melted into the outer surface of the instant coffee particles. A method for preparing an instant coffee composition according to any one of the preceding claims, comprising: i) providing a soluble coffee particle having an outer surface and inner pores； ii) providing at least a partial coating of the outer surface of the soluble coffee particle with a finely ground coffee-based insoluble material to form a particle with coating； and iii) heating the coated particle and exposing it to compressed gas so that at least a portion of the gas is trapped and retained in the internal pores of the particle. The method according to claim 5, in which a particle of instant coffee is provided at the stage of drying by spraying a concentrated extract of coffee.
