This invention relates to an improved process in the manufacture of spent mango peel powder consequently after the recovery and preparation of pectin from mango peels. ln this improved process, the pectin-containing material is subjected to acid hydrolysis to extract the pectin, then separation of the filtrate containing the pectin material by a simple settling-decantation filtration step, and recovery of the pectin material by alcoholic precipitation-mixing-and settling step. The pectin precipitate is further dried and milled to obtain the pectin powder while the resulting spent mango peel (pectin-free material) is further dried and milled. The improved process is characterized by the full recovery of spent mango peels with a polyphenolic content of at least 45 mg per gram of dried solid product.
